Herdsman

Herdsman cattle are cared for by farmers backed by generations of family experience; many of whom have also learned cutting edge farming and husbandry techniques from Britain’s world class agricultural colleges. With the assistance of veterinary supervision, we ensure that the very highest standards of animal welfare are continually maintained.

Herdsman cattle benefit from the best of the Scottish climate, and are protected from the worst of it; grazing free on natural grass pasture during the warm, dry months but sheltered from the winter cold in purpose built barns on farms all around the Scottish countryside.

There’s a seasonal flavour to their diet too. They enjoy the most natural and healthy selection of feed from the Scottish harvest; as well as grass they also enjoy barley, wheat, a variety of vegetables, sugar beet and distillers’ grains. Herdsman cattle are never subjected to growth promoters or hormones and never fed animal proteins.

Completing this cycle of care, Herdsman selects only the best cuts, many of which are then matured for at least 21 days. Some cuts are hung in the traditional way, on the bone, which has two benefits; it causes the muscle fibres to relax, making the meat even more tender, and some evaporation occurs which concentrates the flavour. Other cuts are best if moisture is retained, but nonetheless benefit from the tenderising effect of maturing using the vacuum technique. Both methods result in Herdsman’s exceptional quality and consistently delicious beef.
